One-pot sausage lasagne

Our one-pot sausage lasagne recipe has all the cosy layers of flavour you expect, minus the hard work – simple, clever cooking at its best.

All the rich, comforting flavours of a classic lasagne come together here without the layering or fuss. Cooked in a single dish, it’s an easy, deeply savoury meal that’s perfect for simple family suppers or a cosy night in.

What you'll need...

  • 2 tbsp olive oil
  • 1/2 tsp fennel seeds
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 3 garlic cloves, finely sliced
  • 1/2 red chilli, finely chopped
  • 8 pork sausages, skins removed
  • 150ml red wine
  • 500ml tomato passata
  • 3 fresh lasagne sheets

Method

  1. Heat half the oil in a wide, shallow ovenproof pan over a medium-high heat. Once hot, add the fennel seeds and let them sizzle, then add the onion, carrot, celery, garlic and chilli and cook for 5 minutes until softened.

  2. Add the remaining oil and the sausages, breaking them up with a spatula into a mince. Cook, stirring often, until the meat is deeply browned and caramelised, then add the wine. Simmer until reduced by half then stir in the passata and gently simmer the ragù for 25 minutes.

  3. Heat the oven to 200°C/180°C fan/gas 6. Halve the lasagne sheets lengthways to make 6 long strips, then gently stir them into the ragù so they’re coated but not broken. Season to taste, tear the mozzarella over the top and drizzle with pesto, then bake for 25 minutes.

  4. Serve immediately and with any side dishes you may also have prepped.
